Wonder what they are? I first discovered these during my stay in HK. I came across the recipe, so I thought I would give it a go. It's hard work, I must have worked my hands through hundreds of them.
These are Pearl Rice Noodles 銀針粉, a more commonly known name would be 'silver needle noodles' or 'rat noodle'.

Where are these in HK? I've not tried them before. Would love to try them. I'm on a weird noodle kick these days (must be lacking carbs from all this hiking?)
You can buy them in Vanguard or CRC supermarkets, they both go under the Chinese name 華潤. Or you may find them in wet markets, but supermarkets are your best bet.
