Something completely random, but lately, I've been really into pickling. It must be the influence of living here. Pickled cucumber, pickled carrots, pickled red cabbage, and pickled ginger (gari)... taste absolutely marvelous in hot weather.

What about Pickled Onions? Before the War, pickling was a Great Annual Task with Jars being solicited from Family & Friends followed by hours of peeling. We mainly pickled Onions & Red Cabbage. You will now be able to compete with my Jams at the Local Allotments Show????????????
What a memory? Actually it was Apple & Plum (although the label said 'Plumb'??????????) From memory it was just Shallots with the outer skin removed, placed in jar and covered with Pickling Vinegar, then stored for about 6 months to absorb. In spite of the rubbish weathe - which has ruined the Apple Crop, I managed to pick a Kilo of Raspberry's which I boiled into Jam on Wednesday. Pity I could not send one to You?
I will try making pickled onions one day. I just recently made a bag of pickled cucumbers which takes anything from a few hours to a day or two to pickle depending on taste.
When I'm back in the UK, I'll send a request for Ron's jam ;)

No, nothing beats your jam, especially your blackberry butter. I also enjoyed the apple & something jam you made years back ;)
