Coconut red bean pudding 椰汁紅豆糕 is a traditional dessert of Hong Kong. I made some today, and it tasted so creamy! It didn't turn out as solid as it traditionally should, so I'll reduce the water content next time.
ummm...that really does look good! So, now your Easter hike is gonna have a Coconut Bean theme. Not sure how to do that? But, somehow need to make sure we remember your offer to share !!!!!
Ha ha! Don't worry, I'll remember! Only trouble is, with the ever increasing number of members joining hikes (about 50-60 now?) it's going to be a bit difficult to cater for everyone!
